Smashed Japanese Sweet Potato and Guac Pies

This is a bright and colorful main dish or appetizer idea that will satisfy and delight you and your guests. Serve with fresh salsa, and you got a party. 


Smashed Japanese Sweet Potato and Guac Pies

  • 2 Japanese sweet potatoes, cubbed and boiled until soft
  • fresh guacamole (smashed ripe avocados, onion, garlic, lime, cilantro, salt, pepper)
  • veggies of choice like cherry tomatoes, peppers and cilantro
Smash your boiled cubbed potatoes in a bowl until mashed. Warm up a non-stick skillet and using two spoons or your hands, create desired size patties to cook like pancakes on skillet. Flip to cook both sides, they may be a bit messy and they're quite forgiving-just mash the potatoes on the skillet to the form you wish them to be. Don't worry if they're not perfect, the gauc will cover imperfections. When cooked to desired crispiness (about 3 min each side for me), scoop out and plate with fresh guac and desired toppings. Enjoy with fresh salsa!
