The dough should feel like crumby cookie dough, be careful not to over blend or over water. You'll need to pulse processor slow, use a plunger and only add a splash of water to help move the blade. If your dough gets too wet, just add more oats to help. Scoop out sticky dough into a pie or cake pan, and press the dough into the pan with your fingers. A touch of water on your fingers will also help dough from sticking to you. In VitaMix or high-powered blender, blend filling ingredients together until creamy and completely smooth–there should be no lumps or chunks. Poor creamy filling into your pie crust evenly. With very dry hands, crush freeze-dried berries like a powder on top of the whole pie to cover the cream filling. Place pie in freezer for a couple of hours, or overnight, to set. Defrost pie before serving to get cheesecake like consistency (in the fridge for at least 2-hrs). Store leftover in fridge, you only need to freeze to help set though dough for the first 2 hours. Transfer cooked veggies into a VitaMix or high-powered blender and add all remainder ingredients. Blend from low to high until smooth. Note: be careful not to overheat your blender, you may want to do half the amount and then the other depending on the strength of your blender. Be careful not to over blend, batter should be very sticky and crumbly. Scoop out batter and smooth out into a pie dish with hands/fingers--you can use some water on your hands to help mold the batter out if needed. Blend chocolate mousse ingredients together until creamy and smooth, poor into pecan pie shell, smooth out layer. Allow coconut cream to defrost just enough so that it comes out of the can (you don't want it to melt), and blend on high speed with vanilla bean and monk fruit sugar until whipped smooth. Top chocolate layer with coconut cream layer. Top with sliced dark chocolate or freeze-dried fruit of choice. Cool in fridge for a couple of hours before serving so the tofu sets. Keep stored in fridge until ready to serve. The slices will come out pretty sticky while keeping their shape using a sharp knife to slice and cake spatula to dish out. Meanwile, melt chocolate chips (without burning) in a glass bowl 1min in the micorwave or air fryer (check frequently not to overcook). Mix puffed rice into melted chocolate (you may need a larger bowl). After ice cream pops have settled in freezer, remove each one and dip into the chocolate rice mixture, and place onto a cookie sheet. Place back into freezer to set (at least 30min) and enjoy! If you're a juice mixer, juice your beets first, take the pulp for the burgers, and juice anything else you like to add to your juice separately. Take your beet pulp and mix with almond flour, onion powder, sea salt and black pepper. Roll into burger patties<i> (4-5 juiced beets makes x2 regular size patties)</i>, and air fry or bake for 25-30min at 350 degrees. You can make a batch and freeze the patties individually. The consistency should resemble thick pancake batter, if you need to add a little water-do it a very little at a time not to drown your batter. Warm up a non-stick pan and poor 1/3 cup or a serving spoon worth of batter into the hot pan. Flip and continue just like making pancakes. You may need to smooth out some of the batter in the pan to perfect your circles, the batter is forgiving so if you mess up one side, just fix by topping with a little more batter when you flip. Scoop out, and spread/kneed dough out into a pie dish with fingers. Tip: keep your fingers a little wet with water to help from sticking. Blend mangos, lime juice, coconut cream, honey, vanilla bean powder together on high speed, well, to make filling. Poor filling on top of your nut dough crust. Blend green peas with roasted garlic, lemon juice, lemon zest and pinch of sea salt for green pea salsa, and top on lettuce bed. Drain cashews from water after soaking in water for 20 min, and crumble in food processor or pulse in blender with lemon juice and zest. Top cashew crumble on lettachos. This pancake hack will make you feel like you're eating cake for breakfast, when really, it's just blended oatmeal. Normal pancakes, or even the boxes marked as "superfood" pack in so many calorie dense ingredients that are really not necessary to start your morning off with. Another trick to keep your sugar/calories down in the morning is using a whipped cream topping instead, or to help limit, a load of maple syrup. It can be whipped coconut cream or heavy cream. Blend dry oats in a blender to break down into powder for oat version before blending with egg/water. You can add a splash or more of water if batter is too thick, but be very careful not to over water. If you're using banana version, no water should be used. If you're adding add-ons or toppings, I suggest adding them after you blend, or half way through, so you keep those ingredients whole and yummy. Here's a fairly light and fragrant curry with a tomato base, that I stewed with locally picked pumpkin squash. You can use your favorite squash, veggies or potatoes to sub pumpkin, depending on the season. Do toast your spices prior to stewing for the most aromatic flavors possible. I cooked my yellow lentils separate to the red curry for a more fluffy, rice-like texture. You can also cook everything in one pot if you want a thicker stew. Mix in optional blueberries towards the end so you keep some fruit whole. Warm up a non-stick skillet to medium heat and poor 1/3 of the batter from blender into skillet. When all sides scrape off pan easy with spatula, and the center is bubbled, it's safe to flip. Continue x2 more times–batter makes about x3 pancakes. Top each pancake with pure organic apple butter and raw almond butter for a nutrient rich and delicious treat! Cherry compote, wild blueberry sauce with lemon zest or good old fashioned chocolate chips are all wonderful editions as well. Sauté until golden brown, scraping from the pan. Add spices, nutritional yeast, and veggies (peppers and spinach). Cook together just for about a minute so that everything gets slightly soft and combined together. Top with optional cheese and allow to melt just a couple minutes more but be careful not to burn. Poor batter into a non stick pie dish, and bake at 350° for 45 min, or until softly firm to touch. Allow to cool for at least 20 minutes before frosting. Meanwhile, blend all "icing" ingredients together and keep in fridge until ready to ice your cake. This makes a thin layer of icing, just use x2 avocados if you want a thicker layer.
