Crispy Puffed Rice Chicken with Yogurt Apple Mustard Slaw

A healthier alternative for summer-time favorite fried chicken and mayo based slaw. This version is air-fried with puffed rice for the crispy chicken alternative, and greek yogurt based dressing for the slaw. Enjoy!

Yogurt Apple Mustard Slaw

  • 1 tbsp raw cashews or sunflower seeds
  • 1/4 cup 0% greek yogurt (or vegan alternative) 
  • 1 lemon, juiced and zest
  • 1 tsp mustard seed powder
  • 1 date or 1 tbsp honey or maple syrup
  • 1/4 cup dried (unsweetened) or fresh apples, chopped
  • 2 tbsp raisins
  • 1/4 cup fennel or dill (or skip)
  • 1 bag shredded broccoli
  • sea salt
  • black pepper

Crispy Puffed Rice Chicken

  • 1 chicken breast, or Beyond Meat alternative
  • 2 tbsp 0% greek yogurt, or vegan alternative 
  • 1/4 cup puffed rice cereal
  • sea salt
  • 1 tsp mustard seed powder
  • 1 tsp onion powder
  • sea salt/pepper
  • cayenne pepper 
Blend cashews, yogurt, lemon juice, mustard seed powder and date together to make dressing for yogurt slaw. Combine apples, raisins, fennle, dill, salt, pepper and shredding broccoli to make slaw and set aside. 

Cover chicken or alternative with mustard seed powder, onion powder, sea salt, pepper, and lemon zest. Spread greek yogurt on top, and add puffed rice on top (yogurt helps rice stick). Place in air frier or oven to cook to desired donenness (about 35-40min on 350).
