Kelp Noodle Dreams with Roasted Garlic Cashew Cauliflower Cream

I've got a ton of Kelp Noodle recipes on this blog, just search "kelp" for more of the goodness. These once rubberbandy noodles take a deep dive in baking soda water for 24hrs to silken up. No cooking is required and they're a great light base to start a hearty meal with. I toasted these in cashew cauliflower cream with roasted garlic for a delightful plant-based dish. Topped with tons of fresh mint from my garden, green peas and a baked sweet potato. 





Kelp Noodle Dreams with Roasted Garlic Cashew Cauliflower Cream

  • 1 pack kelp noodles
  • 1 tbsp baking soda
  • 1/4 cup raw cashews
  • 1/2 cup fresh or frozen cauliflower rice (or florrets)
  • 1/2 head roasted garlic
  • 1 lemon, juiced plus zest
  • sea salt
  • crushed black pepper corns 
  • green peas
  • baked sweet potato
  • fresh mint
  • sautéed wild mushrooms and onions
Soak your kelp noodles in a bath of baking soda and water overnight. Drain and rinse them when ready to use. Blend cashews, cauliflower, roasted garlic, salt, pepper and  lemon juice with zest–add 1 tbsp of water at a time if you need help blending (careful not to drown your creamy sauce with water!). Poor sauce on top of kelp noodles and swirl. Top with sweet potatoes, fresh mint, peas and sautéed veggies of choice.
