Hot & Sour Veggie Noodle Soup

This isn't like your traditional hot and sour soup from Chinese takeout–while the flavors and aroma will bring you close to it, without leaving you with inflammation and heartburn afterwards. I use gluten-free, single ingredient heart of palm pasta for the noodles in this brothy soup. It's a perfect meal when you want something warm, nourishing and comforting in under 10 minutes. You can add more fresh or frozen veggies, serve with your favorite starches, and even add your own desired protein. Enjoy!


Hot & Sour Veggie Noodle Soup

  • 1 onion, sliced
  • 1 pack hearts of palm pasta, trader joes
  • 1/2 - 1 block organic tofu, cubed
    • or tempeh, shrimp, chicken breast... 
  • 1 can crushed tomatoes
  • 1 box miso veggie broth
    • or beef bone, or chicken broth
  • 1 tsp olive oil from sun-dried tomatoes
  • 1 cup frozen sweet peas
  • 1 tsp garlic powder
  • kosher sea salt and fresh cracked black pepper to taste
  • 1 tsp Trader Joe's Peri-Peri sauce (fermented dried chili), optional to finish!
