Soft Tofu Scramble Stuffing

If you're looking for a fast, savory, high protein side or main for your next meal, this scramble stuffing-like creation is wonderful. Pillowy soft tofu scramble gets dressed with your favorite veggies, that is nourishing on it's own, or along with your favorite sides. I've been enjoying this scramble for breakfast often lately, and enjoyed with some chicken breast, local cheese and a sweet potato for a complete dinner in this feature. Toss with your favorite veggies or follow my pattern below and enjoy!




Soft Tofu Scramble Stuffing

  • 1/5 block Wildwood High Protein Tofu
  • 1 heaping handful baby spinach
  • 1/2 cup sliced bell peppers
  • 1 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • kosher sea salt and fresh cracked black pepper to taste
  • optional: 2 tbsp premium/local ricotta, cottage or mozzarella cheese (or skip)
Warm up a skillet and crumble tofu into the pan with your fingers. Sauté until golden brown, scraping from the pan. Add spices, nutritional yeast, and veggies (peppers and spinach). Cook together just for about a minute so that everything gets slightly soft and combined together. Top with optional cheese and allow to melt just a couple minutes more but be careful not to burn. Serve on it's own for breakfast, or as a main side to enjoy with a tahini dressed Japanese potato, mushroom steak, chicken, fish, eggplant or whatever moves you that day!
