Lentil Pasta Medley

Here's a nutrient rich complete meal you can enjoy for dinner or lunch in just a few minutes. Packed with plants and deliciously simple savory flavors. You can add your favorite veggies or proteins to this base like cherry tomatoes, grilled tofu or chicken–the combinations are endless. Enjoy!

Lentil Pasta Medley

  • 1 serving of Tolerant Lentil Pasta
  • 1-2 cups broccoli, chopped
  • 1 can pure organic tomato sauce
  • 1 cup wild mushrooms, chopped
  • 1-2 cloves garlic, minced
  • 1 cup green peas
  • 1/2 cup cottage cheese
    • vegans: sub with baked then crumbled tofu with nutritional yeast or skip
  • kosher sea salt and fresh cracked black pepper to taste
Cook pasta according to package instructions. Warm up garlic in a large skillet, add tomato sauce, salt and pepper to taste, then add remainder of ingredients including pasta. Enjoy!
