Cauliflower Gnocchi with Creamy Green Pea Pesto

Trader Joe's has a pretty clean Cauliflower Gnocchi made mostly of cauliflower, and some potatoes. It's a wonderful meal starter that I keep in my freezer for fast and healthy dinner bases. It's pretty easy to also make your own gnocchi at home–I will save that for another post :) 
I use a half of an avocado with green peas and herbs for an herby pea pesto that provides some protein and delicious flavor to enjoy in this complete and simple meal. 





Cauliflower Gnocchi with Creamy Green Pea Pesto

  • 1 cup cauliflower gnocchi
  • 2 cups frozen green peas
  • 1 clove garlic
  • 1/2 avocado
  • 1/2 bunch fresh parsley
  • 1 organic lemon with zest and juice
  • 1/4 cup nutritional yeast
  • kosher sea salt and fresh cracked black pepper to taste
  • red chili flakes and feta cheese (optional)
Blend all ingredients accept for the cauliflower gnocchi to make your "pesto" sauce. Warm up gnocchi on a skillet until they're almost done. Poor sauce on top and combine well. Top with optional feta cheese crumbles and red chili flakes, and enjoy!
