Sweet Summer Apple Brussel Sprout Salad


When you're looking for an alternative to your standard green salad, this is a wonderful subtly sweet cruciferous sauté you can serve warm or cool as your main green squeeze.




Sweet Summer Apple Brussel Sprout Salad

  • 1 bag fresh brussel sprouts, sliced
  • 1 shallot, finely sliced
  • 1 honeycrisp apple, sliced
  • 2 medjool dates, chopped
  • 1/4 cup sliced almonds
  • 1 lemon, juiced
  • 1 tsp good olive oil (optional)
  • sea salt and fresh cracked black pepper to taste
Dry sauté shallot in a large pan and add brussel sprouts. Lightly wilt but be careful not to over cook–you want leaves soft while keeping their vibrant green color, about 5-7min on medium heat. Lower heat all the way and add remainder ingredients, mix well and turn off heat after all is combine. Top with a little more sliced almonds for garnish and cool to serve as a salad or enjoy warm right away!
