Two Ingredient Vegan French Toast

I really love this French toast hack, especially for long and lazy Sunday mornings. I like to do as little dishes as possible. Making French toast the traditional way is usually a big eggy mess, and also requires extra ingredients like milk that's just not necessary to achieve the soft and spongey texture we love in this breakfast delight. My two ingredient version is fast, clean and nutrient dense. We use only toast and raw almond butter! You can top with fresh fruits like wild blueberries, bananas, or baked apple slices. I use Ezekiel 4:9 sprouted grain bread because it's packed with rich nutrients and helps me feel more full and satisfied later in the day. I haven't tried but I'm sure you can use this method on sourdough, challah or whatever other toast you love to use most. 




Something about the raw almond butter gives this toast a rich enough taste and texture by only adding water on top. That's right, just water! No milk, soymilk, or eggs are needed for this feature. 

Two Ingredient Vegan French Toast

  • 2 slices Ezekiel 4:9 bread, or whatever your preference is
  • 2 tsp raw almond butter
  • 1/4 cup water (more or less depending how soft/spongy you want)
Lightly toast your bread. This helps soak up the water while also keeping it's density. Smear the tops with almond butter. Place bread almond butter face side up on a warm pan. Poor water right on top of the toast in the pan to lightly soften. You can always add more water so start with a little bit at a time. Add your optional fruits and allow to simmer for just a couple of minutes on low (careful not to burn). Serve with maple syrup or enjoy straight up!
