  • 2 cups pitted dates, soaked in warm water for a few minutes and drained
  • 1 1/2 cup oats or mix of oats and sliced almonds
  • 1 tsp cinnamon
  • 3-4 ripe bananas (fresh or frozen)
  • 1/2 block organic tofu
    • or 1/4 cup raw cashews, or 1/2 of a cooked Japanese sweet potato
  • 3 tbsp hemp seeds
  • 1 tsp pure vanilla bean powder
  • 1/4 cup maple syrup or honey
Caramel Drizzle:
  • 1/4 cup pitted dates
  • 1/2 cup almond milk or water with 1 tbsp raw almond butter
Grind 2 cups pitted dates, oats, and cinnamon in a VitaMix or food processor to make "dough". It should be very sticky, and not so easy to scoop out of the blender. Using wet fingers, spread out the dough evenly onto a pie shell. You can add more oats if you need a little more batter, and add very small splashes of water at a time if you need more flexibility–be careful not to turn the dough into mush. Blend bananas, tofu, hemp seeds, vanilla powder and maple syrup together for creamy filling, poor on top of oat crust. Add sliced bananas on top for optional garnish. Blend caramel drizzle ingredients together to make caramel sauce, and drizzle on top. Place in freezer for a few hours to set, and allow to defrost like an ice cream cake before serving (no more than 1 hour defrosted). Keep frozen and allow each slice to thaw for best texture.
