Quick Banana Chocolate Chip Oatmeal Pancakes

These are wicked quick to make in the blender, with only a few simple ingredients. A great alternative to eating your oatmeal in a bowl while enjoying sweet hot pancakes for breakfast or power snack. Enjoy!












Quick Banana Chocolate Chip Oatmeal Pancakes

  • 1 1/2 cup old fashioned rolled oats
  • 1 ripe banana
  • 1 organic egg
    • or 1 tbsp chia seed or flax seed
  • 1/2 tsp baking soda
  • pinch pink sea salt
  • 2 cups water
  • 1 tbsp frozen berries (optional)
  • unsweetened chocolate chips
In a VitaMix or high powered blender, blend all ingredients besides chocolate chips together to make smooth pancake batter. Poor from blender onto a hot non-stick pan, sprinkle a few chocolate chips to the top of the batter and flip to cook both sides. Continue until finished with the batter, makes about 3 pancakes. Serve with warm pure maple syrup, honey or berry compote!
