Quick Oatmeal Pancakes with Cherry Compote
There's nothing like waking up to hot pancakes on an easy morning, especially when they energize and fullfil you with benefiting nutrients to kick start your day. These quick, clean and easy pancakes make for a nourishing breakfast or sweet treat anytime your in the mood for mini cakes. You can freeze leftovers and zap them for future enjoyment–made straight from the blender!
Quick Oatmeal Pancakes with Cherry Compote

- 1 1/2 cup old fashioned rolled oats
- 1 tbsp chia seeds or flax seeds
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp pure vanilla bean powder
- pinch pink sea salt
- 2 cup unsweetened almond milk or water
- you can add small handful of pure coconut flakes or 1 tbsp raw unsalted almond butter if you like a little more spongy/cakeier
- 1/2 of a banana or blueberries if you want a touch of sweetness or color (optional)
- 2 cups frozen organic cherries
In VitaMix or high powered blender, blend all ingredients but the cherries together. Warm up frozen cherries in a small sauce pan and press down on the cherries to break them when they start to warm/soften up to make the sauce. Be careful not to burn and cook low/slow–about 10 minutes on medium/low heat.
When ready to make pancakes, heat up a non-stick skillet and poor batter directly from blender into pan. Start with a small pancake to be sure you like the consistency. Add a touch of water to make thinner pancakes, and a little more oats and blend for thicker pancakes.
Spread cherry compote on bottom of plate and stack/layer with your pancakes! Add warm maple syrup on top for extra yum!
