  • 1 1/2 cup old fashioned rolled oats
  • 1 tbsp chia seeds or flax seeds
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pure vanilla bean powder
  • pinch pink sea salt
  • 2 cup unsweetened almond milk or water
    • you can add small handful of pure coconut flakes or 1 tbsp raw unsalted almond butter if you like a little more spongy/cakeier
  • 1/2 of a banana or blueberries if you want a touch of sweetness or color (optional)
  • 2 cups frozen organic cherries
In VitaMix or high powered blender, blend all ingredients but the cherries together. Warm up frozen cherries in a small sauce pan and press down on the cherries to break them when they start to warm/soften up to make the sauce. Be careful not to burn and cook low/slow–about 10 minutes on medium/low heat.

When ready to make pancakes, heat up a non-stick skillet and poor batter directly from blender into pan. Start with a small pancake to be sure you like the consistency. Add a touch of water to make thinner pancakes, and a little more oats and blend for thicker pancakes.

Spread cherry compote on bottom of plate and stack/layer with your pancakes! Add warm maple syrup on top for extra yum!
