Hearts of Palm Pasta Primavera

I recently discovered Heats of Palm Pasta at my local Trader Joes because all my friends where raving about it. The ingredients of the pasta are super simple and clean, just "hearts of palm.", and available at most health food stores. If you can't find already noodled hearts of palm in your local health food store, you can shred your own and I'll share how below. You can also use zucchini noodles instead just fine. Enjoy!

Hearts of Palm Pasta Primavera

  • 1 pack hearts of palm pasta
    • or make your own by shredding whole hearts of palm with two forks, or running through your veggie spiralizer
    • or use zucchini noodles
  • 1/2 sweet onion
  • 1 small can pure tomato paste
  • 1 red pepper
  • exotic mushrooms
  • lemon
  • a lot of red chili flakes
  • 1 tsp coconut aminos
  • oregano
  • few splashes water
  • side green of choice
  • fresh basil

In a wok or large pan, dry sauté onions and then add remainder ingredients (minus pasta, side greens and basil). Allow to stew for a few minutes, add pasta, swirl, and serve with side of greens and fresh basil on top.
