Birthday Cake Waffles

In light of my Birthday month, here's to Birthday Cake Waffles. I use sprouted whole-grain waffles as the base, and pure coconut cream for the topping. Add your favorite fresh berries and pure maple syrup for a festive breakfast fit for the party king or queen! I also love serving this dish as a festive brunch any time of the year.

Birthday Cake Waffles

  • organic sprouted whole-grain waffles (I suggest these)
  • 2 cans, organic coconut cream, chilled overnight in fridge (no guar gum)
  • fresh berries
  • pure maple syrup
  • cinnamon 
  • optional toppings: sliced almonds, organic unsweetened coconut flakes, lemon zest
Plan to chill your cans of coconut cream (not milk) in advance overnight in the fridge, doesn't work well in the freezer. Toast your waffles and meanwhile, blend your chilled coconut cream cans in VitaMix, or hand blender to turn into whipped coconut cream. Scoop on top of waffles and top with maple syrup, cinnamon and optional toppings.
