Potato Patty Cakes

If you're looking for a naan, wrap, bread, or pizza base substitute–this is a wonderful gluten-free healthy single ingredient hack you can enjoy with so many of your favorite toppings. For this feature, I made a bright, vibrant and citrusy guacamole treat that you can enjoy as a main course or serve as a colorful appetizer. Feel free to explore toppings like traditional pizza style tomato sauce, mushrooms, peppers or even a green herby pesto. You can make larger flat cakes and wrap your favorite sandwich fixings inside. You can either bake a batch of these, or cook on a skillet like pancakes if you don't have an oven. 

Potatoes are abundant in amino acids that specifically inhibit viral growth. Help keep the liver grounded and stable, giving us a good constitution. If for whatever reason you have an allergy to potatoes, you can make this recipe with cauliflower, or squash. 

Potato Patty Cakes

  • 2 pounds potatoes, peeled and diced
    • or cauliflower, squash, sweet potato or Japanese potato
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • fresh made guacamole (mashed avocado, onion, cilantro, lime and garlic)
  • fresh veggies of choice (leafy kale, sliced sweet bell peppers, olives, broccoli, tomatoes, or whatever cooked or raw veggies you love)

Preheat oven to 400 degrees or skip if you're skillet cooking these. Bring a pot of water to a boil and steam potatoes for 5-10 minutes, until soft. Remove and cool completely. Place the potatoes in a bowl together with garlic powder, onion powder, dried oregano. Mash with a fork or potato masher until smooth. Using a 1/8 cup measure, or just eyeballing with your hands, form the mixture into 9 flat patties about 1/2-3/4 inch thick. Place on a non-stick cookie sheet and bake for 20 minutes, or cook each patty on a skillet as you would pancakes (cooking evenly on both sides). Top with toppings of choice and enjoy right away or bake again if you're using more of a traditional pizza topping. Enjoy!
