Potato Patty Cakes

For this feature, I made a bright, vibrant and citrusy guacamole treat that you can enjoy as a main course or serve as a colorful appetizer. Feel free to explore toppings like traditional pizza style tomato sauce, mushrooms, peppers or even a green herby pesto. You can make larger flat cakes and wrap your favorite sandwich fixings inside. You can either bake a batch of these, or cook on a skillet like pancakes if you don't have an oven.

- 2 pounds potatoes, peeled and diced
- or cauliflower, squash, sweet potato or Japanese potato
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- fresh made guacamole (mashed avocado, onion, cilantro, lime and garlic)
- fresh veggies of choice (leafy kale, sliced sweet bell peppers, olives, broccoli, tomatoes, or whatever cooked or raw veggies you love)
