Air Fried Spaghetti Squash Egg Basket

This is the result of a few leftovers, with some help from my new kitchen bestie, Air Frier. You can recreate this in a conventional oven if you don't have an air frier, and can jazz up with veggie toppings for a quick and wholesome lunch or dinner. 

Air Fried Spaghetti Squash Egg Basket

  • 1/2 of a cooked spaghetti squash (seeded and strands loosened with a fork)
  • 1/2 cup tomato sauce (I used sauce from my leftover Lubia)
  • 1 organic egg
    • or mushrooms, peppers, or skip. 
Poor your tomato sauce on cooked spaghetti squash (still in skin) and mix around with two forks. Crack an egg on top and air fry in spaghetti squash shell for 15min on 350, or bake on a cookie sheet for 25min on 350.
