Grain-Free Warm Apple Spiced Chia Seed Porridge

If you're looking for a grain-free oatmeal or cereal sub, this is a wonderful omega-3 packed bowl of goodness to jumpstart your morning. Chia seeds are a complete superfood loaded with nutrients like fiber, protein, magnesium and more, while being relatively low in calories. Because they're so richly nutrient dense, they also help curb your hunger so you can go longer between meals through your day. I used warm spiced apples and sprouted pecans for this bowl because they're in season right now, but you can mix in your favorite fruits like fresh berries, stone fruit, tropical fruits, dates or whatever you love most! 





Grain-Free Warm Apple Spiced Chia Seed Porridge

  • 1 tbsp chia seeds
  • 1 tsp pure vanilla bean powder
  • 1/4 cup water
    • or, non-dairy milk of choice (for a richer flavor and texture)
  • 1 tsp pure sweetener like honey, maple syrup, monk fruit sugar or mashed banana (optional)
  • 1 lightly baked pink lady apple, chopped (or apple/fruit of choice)
  • 1 tsp raw cacao nibs
  • 1 tbsp sprouted pecans (or any nuts/seeds you love)
  • 1/2 tsp pure coconut flakes unsweetened (ingredients should just say "coconut")
Poor chia seeds, vanilla water (or non-dairy milk), and optional sweetener into a jar and stir well. Seal and store in fridge overnight so your chia seeds sprout. Top with chopped baked apple, cacao nibs, pecans and coconut flakes, or your favorite toppings, before enjoying.
