Vegan Mint Chip Extra Nice Cream
This nice cream is extra nice because we're only using 1/2 of a banana (vs. more than 1) and substituting with ice, yes ice! It just requires a little horsepower to pound the ice down into your blender faster than it melts, and you'll enjoy the glory of real ice-cream!
Mint Chip Extra Nice Cream

- 1 tray ice cubes (about 2 cups)
- 1/2 frozen peeled banana
- 1 tsp pure mint extract
- 1 tsp stevia liquid (or monk fruit sugar)
- handful pure whole roasted cocoa beans, ground (or any unsweetened chocolate nibs or chocolate chips of choice)
- 1 tbsp raw, unsalted almond butter (or tahini or handful raw, unsalted nuts)
Ground roasted cacao beans coarsely and set aside. Combine ice, frozen banana, mint extract, stevia, and almond butter into VitaMix or high powered blender, and blend from low to high speed, pounding ingredients down into blender blade with force quickly to whip ice into ice cream before it melts. Sprinkle with desired amount of cocoa and stir in together before serving.
