Chocolate Goji Cake Pie

My classic Chocolate Cake Pie made with all super clean ingredients that are rich in plant-protein, iron, fiber and natural minerals that make a delicious and nutritious dessert, snack, or guilt-free sweet breakfast. Goji berries are deliciously sweet and sour and remind me of eating gummy bears, while enjoying their antioxidant health benefits. Red foods like goji berries, beets and strawberries also help support healthy menstrual flow, so this red speckled cake pie is an extra wonderful treat for that special time of month.






Chocolate Goji Cake Pie

  • 1 large cooked sweet potato
    • or 1/4 cup almond meal, coconut flour, steal cut oats
  • 1 can chickpeas, unsalted
  • 1/4 cup raw almond butter, unsalted
    • or 1 tbsp nut/seed butter of choice, and more potato or chickpeas to bind for lower calorie 
  • 1/4 cup unsweetened cacoa powder
  • 1 tsp baking soda or powder
  • 1 tsp ground dark roast coffee (I use grounds left from my morning coffee)
  • 1 tbsp ground flax seed, soaked in equal parts warm water 
  • 1/2 cup pure maple syrup 
    • or 1/4 cup honey or monk fruit sugar or date paste
  • 4 medjool dates
    • or heaping handful of raisins, or more sweetener above
  • unsweetened chocolate chips, or chopped sugar-free chocolate bar
  • heaping handful goji berries
Preheat oven to 350. In VitaMix, blend all ingredients together accept for chocolate chips and goji berries. Stir in chocolate chips and goji berries after batter is blended together. Poor batter into a pie baking pan, or into cupcake tray with papers. Top with more chocolate chips and goji berries. Bake for 45min and cool for 7-10min before serving.⁣
