French Girl Salad in Mexico

I'm spending my COVID-19 pandemic in Mexico and have been nestled in Tulum for the month of October. We've survived x2 hurricanes during my time here, and I've been in love with living more rustically, along with my new routine of riding my pink bike to forfrage fresh produce, after swimming the turquoise ocean. 


While I love cooking, the local food and venues in Tulum are abundant with innovative plant-based and vegan options. I've been fully indulging in all the local cuisine and so inspired to create new recipes with everything I've tasted during this trip. One recipe I've made a few times in my ABB kitchen to feel a little more at home is one from my dear friend Brigitte, that I like to call her "French Girl Salad". It's pretty simple and simply delicious. The best part of the salad is the rich combo of avocado and pistachio, the recipe to follow below. 




French Girl Salad in Mexico
inspired by Brigitte's Classic French Salad, October 30, 2020
  • Greens: arugula, spinach, romaine or a mix
  • red tomatoes, chunks
  • radish, sliced thin
  • pistachio or pumpkin seeds, or a mix
  • ripe avocado, chunks 
  • olive oil and fresh lemon juice
  • kosher sea salt and fresh cracked black pepper
  • red pepper, optional 
Toss all ingredients together in a bowl and enjoy!
