Oatmeal Fruit Pie

This is one of the most simple and versatile vegan, gluten-free recipes you can enjoy as a wholesome and clean breakfast, snack or dessert. I used fresh figs and cherries but you can also use your favorite fruits like banana, apples, fresh berries or whatever fruits you have! It's super yummy by the slice, or cut up and add into a smoothie bowl! 










Oatmeal Fruit Pie

  • 2 cups rolled oats
  • 1-2 tbsp chia seeds (optional, or hemp seeds)
  • 1 tsp cinnamon
  • 1 tsp vanilla bean powder (or pure extract)
  • 1 tsp stevia (optional, or monk fruit sugar, or maple syrup to taste) 
  • 3.5-4 cups water
  • fresh fruit (figs, cherries, berries, apples, banana, raisins, or whatever you have!)
Mix all ingredients but fresh fruit together in a bowl. The consistency should resemble how you would prepare to make oatmeal in a pot. Poor the oatmeal mixture into a pie pan, and spread out evenly with spoon. Top with fresh fruits and bake in oven at 350 for 45 minutes. Allow pie to cool for 10min before slicing.
