Blue Greens Cream: A Smarter Nice Cream

I love nice cream (blended frozen banana ice cream), but when I'm refining my summertime figure, I get more granular on the amount of fruits and carbs I consume-even the healthy whole-food ones! I usually never try to eat more fruit blended than I would whole–and generally blended fruit ice cream is more fruit than I'd be able to eat in one serving. This is a neat hack to control the amount of fruits you're consuming in your blended smoothie, or in this case, blue greens nice cream! 


The secret is to use all frozen leafy greens and cauliflower as the base, only a palm size of whatever fruit you like, and a few drops of stevia to kick up the sweetness. Blue Greens Cream: A Smarter Nice Cream

  • 1-2 cups frozen kale or spinach
  • 1/4 cup frozen cauliflower (riced or florets, or use more ice)
  • 1 tbsp frozen blueberries
  • 1/4 piece of a frozen banana (about just the tip, or 3 cubes frozen mango)
  • 1 tbsp frozen raspberry (optional)
  • 1 scoop blue or green spirulina powder 
  • little cinnamon and pure vanilla extract for flavor
  • few drops of stevia to sweet to your liking (I use about 4 drops in this serving, monk fruit sugar works too)
  • 3-4 ice cubes
  • splash of water (careful not to turn into soup!)
Pound all ingredients down into VitaMix blender blade quickly from low to hi speed using the plunger to whip into ice cream. Scoop out with spatula and enjoy right away. You can top with unsweetened coconut flakes, crushed raw nuts, fresh berries or hemp seeds!
