Ultra Violet Blender Nice Cream: Raw, Vegan

Super electrifying power breakfast, brunch or dessert fit for a unicorn, and packed with antioxidants, water and nums! I topped this version with raw creamy peanut butter, cinnamon and a pinch of Maldon Salt Flakes ⁣⁣for extra special culinary kick–get creative with whatever other toppings you already have. You can also enjoy this nice cream as a cake a la mode topping upon my Chickpea Blondie!

Ultra Violet Blender Nice Cream: Raw, Vegan

  • 6 standard, diamond or small square shaped ice cubes ⁣⁣
  • 1 handful frozen raspberries ⁣⁣
  • 1 handful frozen blueberries ⁣⁣
  • 1 handful raw, soaked, frozen cashews ⁣⁣
  • 4 squirts organic stevia extract ⁣⁣
  • 1 tbsp raw cacaoa nibs⁣⁣
  • 1 tsp pure vanilla extract or powder ⁣⁣
  • small splash water⁣⁣
Topping ideas, or whatever you have: ⁣⁣
  • raw creamy peanut butter, tahini or nut/seed butter of choice⁣⁣
  • pure cinnamon powder ⁣⁣
  • stevia sweetened dark chocolate chips ⁣⁣
  • pinch Maldon salt flakes ⁣⁣
⁣⁣In a VitaMix or super high powered blender, blend all ingredients together starting from low to high speed, using your plunger to push ice and ingredients down into blade until creamy and smooth. Scoop out and top with toppings or enjoy alone!
