Chickpea Blondie Cake Pie

This blondie is on fire, super yummy vanilla version of my classic vegan, gluten-free, oil-free, sugar-free Chocolate Cake Pie. Loaded in plant-protein that will give you energy post-workouts, or a sweet treat for the beginning, middle or end of your day. Enjoy! 





Chickpea Blondie Cake Pie

  • 1/4 cup almond or coconut flour
  • 1/4 cup raw almond butter
  • 1/4 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 tsp almond extract
  • 1/2 cup pure maple syrup
  • 1 can chickpeas, with water (no salt added)
  • 2 medjool dates
  • 1 tsp cinnamon
  • pinch pink salt
  • 1 tsp stevia (optional, if you like extra sweet)
  • unsweetened or stevia sweetened chocolate chips
  • splash water if you need more liquid for batter
Preheat oven to 350. Blend all ingredients together accept for chocolate chips. Stir in chocolate chips after batter is blended together. Poor batter into a pie baking pan, or cupcake tray with papers. Bake for 45min and cool for 7-10min before slicing into serve.
