Coffee Cacao Banana Nice Cream with Blueberry Bites

I love banana nice cream–it's just as delicious as real ice cream with a fraction of the calories, fat, sodium, carbs and sugar as the dairy alternative. You can make up any flavor you like and enjoy as a breakfast bowl, or a sweet after dinner treat that will make you feel energized and vibrant. The trick to this soft serve is frozen bananas and ice whipped so fast they turn into cream, and you need to enjoy in one sitting as it doesn't freeze well. So make what you're ready to eat, or share! 

Coffee Cacao Banana Nice Cream with Blueberry Bites

  • 2 cups frozen banana (peeled)
    • or 1" of frozen banana and 2 cups ice, 5 drops stevia for a super summer light version
  • 1/4 cup unsweetened cacao powder 
  • 1 tbsp unsweetened roasted cacao nibs (optional)
  • 1 tsp finely ground dark roast coffee (or your coffee grounds from morning coffee)
  • 1/2 vanilla bean (whole, or 1 tsp vanilla extract)
  • 2 tbsp water
  • 1/4 cup frozen blueberries (optional)
  • toppings: raw almond butter, cinnamon, coconut flakes (unsweetened)
  • optional: 1 scoop Amazing Grass Peanut Butter SuperFood (optional-for protein and flavor booster)
In VitaMix, blend all ingredients (but raw blueberries, almond butter, cinnamon, coconut flakes) together on hi speed using plunger. Blend until whipped into smooth ice cream. Add blueberries at the very end so you still have some pieces to chew on. Scoop out and top with raw almond butter, cinnamon and coconut flakes. Enjoy right away! You can add peanut butter or almond butter to the frozen base if you'd like an even creamier ice cream.
