Seriously. These cookies are outrageously delicious, it's hard to believe they are actually healthy. They are a perfect snack to take on a hike, to have for breakfast or to fuel yourself after a work out. They are pumped with flax seeds, nuts and dried fruit to give you an energy boost.
Super-duper easy to make... Just try not to eat them all at once...

Farshin' Amazing Oatmeal Cookies

- 2 cups steel cut oats
- 1/4 cup dried shredded coconut
- 1 handful dried cherries (unsweetened, or sweetened with fruit juice - not sugar)
- 2 cups unsweetened soy milk, or non dairy milk of choice
- 1/4 cup whole wheat pastry flour
- 1 tbsp raisins
- 3 tbsp pure maple syrup
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- 3 tbsp ground flax seeds
- 2 tbsp freshly ground pure peanut butter
Preheat oven to 350 degrees. In a mixing bowl, mix all ingredients together well. Scoop cookie batter onto a nonstick or lightly greased cookie sheet - about 2 tablespoons batter per cookie. Leave about an inch between each cookie. Cook for 20-25min. Let cool for 10 minutes before removing off of cookie sheet. Keep Refrigerated. Makes 12 cookies.

ReplyDeleteI tried your cookies last weekend and they turned out fabulously! I didn't make them cookie-shaped though - I poured the batter onto a baking tray, left it in for only 18 minutes, and then cut it into squares. But that worked great! As the batter was very moist, the cookie-squares don't crumble much, which is perfect, as I love the taste of granola bars even though they drive me crazy as quite often they fall apart ;)
Sounds like you made the best out of them Inés :) Sorry they didn't end up to be cookies for you, but the bars sound like a great idea! If you would like these to become cookies next time; just add a little bit more oats and peanut butter. The batter is never going to be a normal cookie batter because its egg, oil and butter free.. so the batter will always be a bit runny. Nonetheless, you can still bake them into cookies, they magically bake up and hold their shape once cooked in the oven. Hope this helps and so happy you enjoyed them!
