Almond Butter French Toast (2-Ingredient Hack)

When I want something warm, slightly indulgent, but still simple and nourishing—this is at hit. 2-ingredient “French toast” is fast, satisfying, and made entirely from things I usually already have on hand.

There’s something about the way this cooks that feels a little bit like magic. The almond butter melts into the bread, the nut milk softens everything just enough, and suddenly you have something golden, crisp on the edges, soft in the center. It’s not traditional, and that’s kind of the point. It’s intuitive, flexible, and exactly what I want most mornings.

2-Ingredient Vegan “French Toast”

  • 1–2 slices sourdough (or your favorite bread, thick cut if possible)
  • 1–2 tbsp raw almond butter (per slice)
  • 1–4 tbsp almond milk (per slice, depending on texture preference)

Fresh berries, pumpkin seeds, hemp seeds, goji berries to top as desired

Spread almond butter evenly onto each slice of bread. Place on a non-stick pan over medium heat. Add almond milk directly into the pan around each slice (about 1–4 tablespoons per slice depending on how soft or structured you want it). Let the bread absorb the milk slightly as it cooks, allowing the bottom to turn golden. Flip and repeat on the other side until warmed through and lightly crisp on the edges.

Top with fresh berries, pumpkin seeds, hemp seeds, and goji berries. Serve warm.

Notes: This one is all about feel. More milk creates a softer, almost custard-like center. Less keeps it more like classic toast with a bit of richness. I usually adjust depending on the bread and how I want it that day. It’s simple, nourishing, and one of those recipes that doesn’t require much thinking—just a good pan and a few ingredients. Enjoy!
