Sweet Summer Lacinato Salad with Air-Fried Falafel Cookies

This sweet, tangy and savory salad is a perfectly balanced whole meal for a warm summer day. Enjoy the bites of sweet dried fruit with tender potatoes in every nutrient rich bite. You can eat this salad on it's own, serve with my falafel cookies like I did, or enjoy with whatever additional protein you like. 




Sweet Summer Lacinato Salad

  • 1 head lacinato kale, chiffonade (sliced thin, or any hearty cruciferous leafy green like cabbage, watercress, brussel sprouts, collard greens, swiss chard) 
  • 1 large shallot or sweet onion, finely sliced 
  • 1 sweet potato, cooked and chopped (or sweet squash)
  • 2 dates, chopped
  • 1 handful goji berries
  • 1 lemon, juiced, plus zest 
  • 1 tsp very good olive oil (optional)
  • 1 tsp red chili flakes
  • 1 tsp pink sea salt
  • 1 tsp fresh cracked black pepper
In a large skillet, dry sauté onions until caramelized. Add small splashes of water as needed to deglaze pan. Add kale and lightly sauté for just a couple minutes to soften but not overcook. Add all remainder ingredients and toss well. Serve room temp or chilled the next day with falafel cookies, raw pumpkin seeds and fresh tahini on top. 

Air-Fried Falafel Cookies
Use my baked falafel cookie recipe and bake them in your air-frier instead of the oven! I did about x3 batches because I have a small air-frier and cooked them each at 320 for 15min a batch.
